hence days will cease to shrink;
Whatever faith you have,
and even those without -
it seems healthy for all to enjoy
a time of rest.

冬至過後日漸長，且把信念擱一旁。親朋好友喜得聚，共享美食祝安康。

依愚見，沒有嚴格韻律、內涵、意境的七言詩，表達能力非常有限，甚至像不痛不癢的打油詩。用在此處似乎不宜。

英文原文寫得很好，輕鬆、明快，溫馨卻又不矯揉造作，直譯既可。不必過於修飾。拋磚如下：

冬至已經過去，
白天不會再縮短。
無論您信仰什麼
或者不信教 -
讓我們為了健康
享受平靜。
願富足的美食，
家人、朋友的擁抱
還有溫暖、祥和
伴隨著您
